Step 1.
Process 3/4 cup of pistachios in a food processor until finely chopped. Transfer to a shallow bowl.
Step 2.
Place remaining pistachios and almonds in same food processor. Process until finely chopped, then transfer toa large bowl.
Step 3.
Add dates, coconut, apricots, almond spread, cocoa, and syrup. Mix until well combined.
Step 4.
Using wet hands, roll 2 level tablespoons of mixture into balls. Roll in pistachios to coat, then place on a tray.
Step 5.
Refrigerate for 2 hours, or until firm.
