TIP: Replace with any Mexican-style seasoning, if preferred, such as chilli powder, taco, or fajita seasoning.

Combine butter and seasoning in a small bowl. Brush over corn cobs to coat.

Heat an oiled barbecue grill plate over medium heat. Add cobs. Cook, turning occasionally for about 8 to 10 minutes, or until charred and tender. Transfer to an oven tray.

Meanwhile, combine mayonnaise, rind, juice, coriander and onions in a small bowl. Season with salt and pepper.

Using a clean pastry brush, brush mayonnaise mixture over hot cobs. Holding cobs over an oven tray, sprinkle evenly with finely grated parmesan, turning to coat.
5.
Serve warm with lime wedges.
