Combine soda water, cordial, curd, liqueur and ice cubes in a large bowl. Whisk until mixture is cold. Strain into a large jug. Whisk until frothy.
2.
Place scoops of sorbet into each of four serving glasses (1-cup capacity). Pour curd mixture evenly over sorbet.
3.
Top with whipped cream and meringues. Serve immediately.
Tip: We used Limoncello liqueur in this recipe. If you prefer a non-alcoholic version, replace with fresh-squeezed lemon juice.
